About the best explanation I have heard from a vet is the fact that dogs are looking for a certain amount of fiber for their diet. Green grass provides this needed fiber, while the grass blade is not digestible for dogs. That's why they throw it up.

My dog is a big grass eater. We like to call him 'goat boy'. My vet said it's either one of two things: a diet deficiency or behavioral. She gave us a supplement to try and if that didn't stop it, then it was behavioral. Well, he still eats grass.
