Aluminum cookware is an excellent conductor of heat. Because of this quality, heat spreads quickly and evenly across the bottom, up the sides and across the cover to completely surround the food being cooked. Aluminum cookware is usually less expensive.

I have always found cast iron to be the best coockware material. It is very heavy, but it distributes the heat very evenly. You have to maintain and clean it very thoroughly though - but it is worth the effort.
