Bake by hand. Although many breadmakers are very good they will never replace bread which is made in any oven and allowed to rise naturally on all sides. Bread is one of the most traditional foods available to modern humans and sometimes simplicity rules.

Most definitely baking by hand is the only way to go. Letting the dough rise for the proper amount of time first is crucial to how it will turn out when it is done baking

For thinner, softer crust, throw a handful of ice cubes into the bottom of the oven just as the crust is beginning to brown.

After removing the bread from the oven, wrap it in foil & put it in the fridge until it cools. This will soften the crust & develop the flavour.

One thing that will make all the difference when making homemade bread of any kind is to use "Better Than Bread" flour! All purpose flour just doesn't cut it. Your bread (especially pizza dough) will turn out so much better. It's in the baking isle
