Good places to store wine, apart from a wine refrigerator or temperature-controlled area, is under the stairs in a cupboard, under the floorboards or in a pantry. A place that will not experience large fluctuations of temperature is best.

Temperature and humidity are the most important factors when storing wine. A humidity of about 50% and a temperature between 50 and 60 degrees Fahrenheit (14 to 18 degrees Celsius) is ideal to maintain the integrity of wine.

Keeping wine too cool will result in an acidic bite and strong overtones of tannin. The optimum temperature is around 14 to 18 degrees Celsius. Too high a temperature and the fruit will age too soon.

Keep wine away from direct sunlight and in a cool place. If the bottle has a cork, keep stored on its side so the cork does not dry out. If it does, air will be allowed into the bottle causing a sour and/or bitter taste.
